This July marked the 3 year anniversary of our bunco group! We had a wonderful time at Melissa's house. Seven of us were able to be there for the pool party fun . . .

We started out the night with yummy hummus & pita chips and chips & salsa. Then we were on to a delicious meal of grilled chicken, green salad, and rice. To top it off, we had strawberry cupcakes with various flavors of frosting and nutter butter flip flops.
A couple recipes were requested. Both recipes come from one of my new favorite sites called Our Best Bites. Click on the title above each picture and it will take you to the recipe.

Lime-Cilantro Rice with Pineapple (I forgot the pineapple though)

Both recipes are super simple and oh-so-yummy! I will be making both again very soon. I've made the lime-cilantro rice once before (intentionally without pineapple) and served it with/in Our Best Bite's chicken and steak fajitas. Oh so good!!!!
After dinner, we made our way into the swimming pool. It was so nice to hang out, laugh, and just talk about this, that, and the other. Tami also gave eggbeater lessons, but her students didn't have all that much luck!
The end of the night included eating more coconut rice and desserts and rolling the dice for prizes! Melissa did a great job with the prizes as we all went home very happy . . . great tote bags, water bottles, wine tags, wine glasses, a pitcher, a watering can, and a lantern.
A FUN night was had by all!
